We pride ourselves on...

Raising animals with care and attention to detail. All our animals are rotated on fresh grass throughout the summer and sheltered from the elements in the winter. We make sure to work with local suppliers to provide the best feed in the winter and at finishing. We really take pride in what we do and how we do it. We consider ourselves artisans and will never have too much volume that we lose attention to detail.

Akaushi beef is a premium Japanese Wagyu breed known for its exceptional marbling, tenderness, and rich flavor profile. Raised in the Kumamoto prefecture of Japan, Akaushi cattle are a specific strain of the Japanese Red Wagyu and are highly prized for their high-quality meat. The beef is characterized by its high percentage of monounsaturated fats, including oleic acid, which contributes to its buttery texture and unique taste. Akaushi beef has gained international acclaim for its exceptional quality, often considered one of the finest and most luxurious beef options available. In recent years, Akaushi cattle have been bred outside of Japan, particularly in the United States, allowing a wider audience to experience the exquisite taste and texture of this prized beef.
